Post 12, in which I give you the recipe for roast pumpkin salad

I have been spending an awful lot of time in the kitchen lately, so to catch up with my blog posts, I am going to share with you some recipes.

Roast Pumpkin and Pine nut salad.

Ingredients:
1/2 a small pumpkin
rocket or baby spinach or mixed leaves
pine nuts (small handful)
Parmesan cheese
Balsamic dressing (you can also use lemon juice)

Method:

Cut pumpkin into smallish pieces, drizzle with oil and roast in oven until cooked through. remove and allow to cool.

Heat a small pan and toss pine nuts in and stir until they are golden brown and remove from heat. Do not add any oil to the pan.

Place leaves in a salad bowl, add pumpkin, pine nuts, parmesan (to taste) and toss. Add balsamic dressing to taste.

Tada! My favourite salad.
